Quality Meat Scotland's whole chain assurance scheme means only animals that meet our stringent assurance standards at every point in their lives are eligible to be classed as Scotch Beef or Scotch Lamb. We inspect these farms annually and only then can the classification 'Scotch Beef' or 'Scotch Lamb' be awarded to those cattle or sheep that have been born and raised on assured Scottish farms and processed at assured scottish processors.
