Processors

Scotland's meat procesing industry is rightly proud of its reputation for high production standards.

All processors and suppliers of Scotch beef, Scotch lamb and Specially Selected pork are reguarly inspected to make sure they are meeting the Standards required for membership of the Scheme. In addition, all meat processing plants must have a fully documented HACCP system in place.

Each carcase is carefully checked at all stages of processing, boning, trimming and packaging to ensure that blemishes and flaws do not detract from the quality product. In addition, the chilling and maturation processes are also carefully controlled and monitored.

The aim is to produce Scotch beef, Scotch Lamb and Specially Selected Pork of the consistent quality and tenderness desired by consumers.
